Low Carb Pizza Casserole

I tried this the other night and it was so good! Took care of my pizza craving for sure!


  • 1 can of diced tomatoes
  • Sliced mushrooms
  • 1 can of sliced olives
  • Conecuh Sausage….or Italian Sausage… whatever our preference is
  • Shredded Mozzerella Cheese
  • 1 small onion
  • 2-3 Bell Peppers
  • Pepperoni
  • Oregano (I prefer fresh but it doesn’t have to be)
  • Salt and Pepper
  • Olive oil

Really there is no right or wrong way to put these ingredients together. I chose these ingredients because this is how I like my pizza, so there is a lot of room for creativity here.

Preheat your over to 350 degrees.

First, I added about 2 TBS of Olive Oil to my pan. Next, I removed the casing off of the Conecuh sausage and then browned the sausage with a diced onion on medium high heat.

While these were cooking, I rinsed the diced tomatoes in a colander and let that drain for about 2 minutes. Once that was completely drained, I poured them onto a paper towel and then covered them with a paper towel as well to remove as much of the access juice as possible. Next I chopped my bell peppers and oregano and set them to the side.

Once the sausage and onions were finished, I poured them into a glass 9×13 dish that  had coated with an olive oil spray. On top of the first layer, I added the layer of tomatoes, bell peppers, olives and mushrooms. I then covered the dish with Mozzarella cheese and topped them with pepperoni, oregano, salt and black pepper.

Bake for 25 minutes on 350 degrees!

So good!! Perfect for any day you are craving pizza!
